Yes. When you join the server, you can create a channel and password protect it for you and your friends. Channels are temporary and are deleted automatically when you leave — but you can create a new one anytime. The docs include tutorials explaining how to set up password protected channels.

The only limit is a maximum of 30 people per channel. Otherwise, use the server as much as you like.

Only minimal, non-identifying data is collected to run and secure the service. This includes anonymous, aggregated analytics (e.g. country-level usage) and temporary connection data used for moderation (such as IP-based bans).
